Jefferson County Recipe of the Day: Loaded Tortillas

A quick and flavorful lunch recipe!

Loaded Tortillas

Ingredients

2 – 7 inch flour tortillas
1/2 cup refried beans
1/2 cup salsa
1/2 cup shredded part-skim mozzarella cheese
1/4 cup shredded cheddar cheese
1/3 cup real bacon bits
1/4 cup chopped tomato
1/4 cup chopped green onion

Directions

~Place tortillas on an ungreased baking sheet. Spread with beans and salsa. Top with cheeses, bacon, and chopped tomato.

~Broil 4 in. from the heat for 4 to 6 minutes (or until cheese is melted).

~Sprinkle with onions.

~Serves two.
