Jefferson County Recipe of the Day: Raisin-Spice Snack Cake

This simple and delicious recipe is perfect for a weekend treat!

Raisin-Spice Snack Cake

Ingredients

1 – regular size package yellow cake mix
1 – regular size package instant butterscotch pudding mix
4 eggs
3/4 cup water
1/2 cup vegetable oil
1/4 cup honey
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 to 1 cup raisins
3/4 cup chopped pecans

Directions

~Preheat oven at 350°.

~In a large bowl, combine the first nine ingredients. Beat on medium speed for two minutes. Stir in raisins.

~Pour into a greased 13×9″ baking pan. Sprinkle with pecans. Bake for 30 to 35 minutes. Cool on a wire rack.

~Makes 15 servings.
