Coconut Chip Coffee Cake
Ingredients
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
Filling/Topping:
1/2 cup sugar
1/2 cup flaked coconut
1/2 cup semisweet chocolate chips
1/2 cup chopped walnuts
Directions
~Preheat oven at 350°.
~In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla.
~Combine the flour, baking powder, baking soda, and salt. Gradually add to the creamed mixture alternately with sour cream. Spoon half of the batter into a greased 10-in. tube pan.
~Combine the filling ingredients; sprinkle half over the batter. Repeat layers.
~Bake for 45 to 50 minutes (or until a toothpick inserted near the center comes out clean). Cool for 10 minutes before removing from pan to a wire rack.
