Jefferson County Recipe of the Day: Sue Reed’s Zucchini Casserole

Zucchini Casserole is perfect for this time of year!

Ingredients

3 cups cubed zucchini with skins
2 carrots grated
1 can cream of chicken soup
½ cup sour cream.
1 pkg herb stuffing mix(melt 1 stick of butter mix with stuffing mix and set aside)

Directions

Mix the first 4 ingredients together and then mix in over half of the stuffing mix. Sprinkle the remainder on top. Bake at 350* for 25-30 minutes. (For extra taste, sprinkle with cheddar cheese the last 10 minutes of baking)
