Jefferson County Recipe of the Day: Spicy Venison Omelet

Start off your day with a spicy venison omelet!

Spicy Venison Omelet

• ½ cup chopped onion
• 1/2 lb. venison – cubed
• 1 green pepper – cubed
• 1 red bell pepper – cubed
• 2 tbsp. Frank’s Red Hot
• 3 eggs – beaten
• 1 tbsp crushed rep pepper
• 1 cup pepper jack cheese
• Salt and pepper to taste
• 1 tbsp butter

  1. In a large frying pan, melt butter over medium heat and sauté onions and peppers, and venison for 15 minutes. Add Frank’s Red Hot and continue sautéing for an additional 5 minutes.
  2. Add eggs and remaining spices to pan and cook for about 4 minutes or until eggs are cooked, stirring a couple times to evenly heat the mixture.
  3. Season with salt and pepper and top with pepper jack cheese. Cover for 1 minute or until cheese is melted.
