Jefferson County Recipe of the Day: Bacon-Ranch Potato Casserole

Try this tasty dish that the whole family will love!

Bacon-Ranch Potato Casserole

Ingredients

1 1/2 pounds lean ground beef, browned
1/2 onion, chopped
1 – 19 oz. can cream of mushroom soup
1 – 32 oz. package frozen tater tots
1 – 15 1/4 oz. can corn, drained
1 cup shredded mild cheddar cheese
1/2 packet ranch dressing mix
Sour cream
1/2 cup of bacon crumbs

Directions

~Preheat the oven to 350 degrees F. Spray 2-quart glass baking dish with cooking spray.

~Place browned hamburger into bottom of pan, covering entire bottom, gently tamping beef down. Sprinkle with diced onions. Layer corn as next layer. Mix soup and 1/2 packet of ranch dressing mix. Top with the soup mixture.

~Layer tater tots on top, covering entire top with tots. Top with bacon and cheese. Bake at 350 degrees F for 45 minutes.

~Serve with sour cream.
