Banana Split Muffins
Ingredients
1-1/2 cups all-purpose flour
1 cup sugar
1/2 cup miniature semi-sweet chocolate or butterscotch chips
1/2 cup chopped walnuts
1 teaspoon baking soda
1 teaspoon salt
3 medium ripe bananas, mashed
1/2 cup mayonnaise
6 maraschino cherries, cut in half
Directions
~Preheat oven at 375°.
~In a deep bowl, combine flour, sugar, chips, walnuts, baking soda, and salt.
~In another bowl, combine bananas and mayonnaise. Stir into dry ingredients just until moistened. Fill paper-lined muffin cups three-fourths full. Bake for 20-25 minutes.
~Press a cherry half, cut side down, into the top of each muffin. Cool for 5 minutes before removing from pan to a wire rack.
