Jefferson County Recipe of the Day: Cajun Cheeseburgers

Try this full-flavored cheeseburger!

Cajun Cheeseburgers

Ingredients

1 pound lean ground beef
1 chipotle pepper in adobo sauce – finely chopped
3 fresh jalapeño peppers – finely chopped
3 cloves garlic – minced
1 ½ tsp of Cajun seasoning
½ a small onion – finely chopped
salt and pepper to taste
5 tbsp. of mayonnaise
half a 3.5 ounce package Buffalo Mozzarella
4 hamburger buns

Directions

~To make the pepper mayo, combine the mayonnaise and chopped chipotle pepper in a small bowl and mix with a fork. Set aside until ready to serve.

~Combine the beef with the rest of the ingredients and mix well. If you have time, allow the mixture to rest for 1-3 hours in the refrigerator.

~Shape the beef mixture into 4 patties and cook each burger over medium-high heat for 4 minutes on each side or until the meat is fully cooked. Add a thick slice of Buffalo Mozzarella to each patty about 90 seconds before cooking is done, to melt the cheese.

~Serve on toasted burger buns with the pepper mayo spread underneath and on top of each patty.
