Jefferson County Recipe of the Day: Garbanzo Gazpacho

This flavorful soup is to be served chilled.

Garbanzo Gazpacho


1 – 15 oz. can garbanzo beans or chickpeas, rinsed and drained
1 – 14 1/2 oz. can Italian diced tomatoes, undrained
1-1/4 cups V-8 juice
1 cup beef broth
1 cup quartered cherry tomatoes
1/2 cup chopped seeded cucumber
1/4 cup chopped red onion
1/4 cup minced fresh cilantro
3 tablespoons lime juice
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon hot pepper sauce


~In a large bowl, combine all the ingredients.

~Cover and refrigerate until serving.
