Jefferson County Recipe of the Day: Kathy’s Vegetable Casserole

A tasty vegetarian dish!

Kathy’s Vegetable Casserole

Ingredients

6 cups of sliced/cubed zucchini
1 cup chopped onion
1 cup sour cream
1 can undiluted mushroom soup
1 stick melted margarine/butter
1 box Stove Top Stuffing
1 cup of grated cheese (either American, Cheddar, or Mozzarella)

Directions

~Preheat oven to 350 degrees.

~Sauté the zucchini/squash and onion together in some oil or butter over medium heat. When almost cooked, drain all the water out of it. Mix in the sour cream and mushroom soup.

~In a separate bowl, combine about melted margarine/butter with the entire box of Stove Top Stuffing (including the seasoning package).

~Lightly grease the bottom and sides of an 8×11 baking pan. Cover the bottom of pan using half of the zucchini mixture, add half of the stuffing mix as the second layer, spread out the remaining half of the zucchini mix as the third layer, and then top it off with the rest of the stuffing mix.

~Sprinkle the top with the grated cheese. Bake for about 30 minutes, or until the cheese is melted and slightly brown.

~Serves six.
