Mini Spinach and Bacon Quiches – Great for brunch!

Mini Spinach and Bacon Quiches

Ingredients

½ cup sweet onion – finely chopped
1 tsp. minced garlic
1 – 10 oz. package frozen chopped spinach – thawed, cooked and drained
½ tsp. salt
½ tsp. pepper
½ tsp. paprika
4 slices of bacon – cooked and crumbled
1 ½ cup grated Parmesan cheese
1 ½ cup shredded mozzarella cheese
½ cup milk
3 eggs – lightly beaten

Directions

~Preheat oven to 350°F.

~Spray about 10 muffin pan cups with nonstick cooking spray.

~Sauté onion in a little oil until tender. Add spinach, garlic, pepper, paprika, and salt. Cook over medium heat, stirring occasionally for about 3 minutes or until liquid evaporates. Remove from heat. Stir in bacon; cool.

~Combine milk and cheeses in large bowl. Add eggs; stir until well blended. Add cooled spinach mixture; mix well.

~Divide mixture evenly among prepared muffin cups. Bake 25 minutes (or until filling is set). Let stand 5 minutes.

~Serve hot or refrigerate and serve cold.
