Jefferson County Recipe of the Day: New Year’s Day Sausage & Sauerkraut

Many people consume green vegetables like kale, chard, and cabbage in the hopes of a wealthier new year because the color and shape of these vegetables are similar to money. People in Germany eat their cabbage in sauerkraut form.

New Year’s Day Sausage and Sauerkraut

Ingredients

4 medium potatoes, peeled and cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces
1 – 16 oz package sauerkraut, rinsed and well-drained
1/4 teaspoon pepper
1/8 teaspoon salt

Directions

~In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned.

~Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut, pepper and salt.

~Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

~Makes 4 servings.
