Spicy Pepper Jack Chicken
Ingredients
6 boneless, skinless chicken breasts – cut into chunks
1 small green pepper
1 small sweet red/orange pepper – seeded and cut into thin strips
1 small sweet onion – chopped
1 can condensed Southwest-style pepper Jack soup
½ chunky salsa
1 tsp. chili powder
½ tsp. cumin
½ tsp. garlic powder
1 cup pepper jack cheese – shredded
4 ½ cups hot cooked rice
Directions
~In a crockpot, combine the chicken, peppers, onion, soup, salsa, and spices. Cover and cook on low for 5-6 hours.
~Serve over top of a bed of hot rice and sprinkle with pepper jack cheese.
~Makes six servings.
