A tasty chicken recipe with a kick..

Spicy Pepper Jack Chicken


6 boneless, skinless chicken breasts – cut into chunks
1 small green pepper
1 small sweet red/orange pepper – seeded and cut into thin strips
1 small sweet onion – chopped
1 can condensed Southwest-Style Pepper Jack cheese soup
½ chunky salsa
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
1 cup pepper jack cheese – shredded
4 ½ cups hot cooked rice


~In a crockpot, combine the chicken, peppers, onion, soup, salsa and spices. Cover and cook on low for 5-6 hours or until chicken juices run clear.

~Serve over top of a bed of hot rice and sprinkle with pepper jack cheese.

~Serves 6 people.
