Ingredients
1 – 15 oz. can solid-pack pumpkin
1 – 15 oz. can of black beans, rinsed and drained
1-1/2 cups frozen corn
1 – 10 oz. can diced tomatoes and green chilies
2 – 14-1/2 oz. cans of reduced-sodium chicken broth
1/4 teaspoon pepper
Directions
-In a large saucepan, mix all ingredients. Bring to a boil.
-Reduce heat; simmer, uncovered, for 10-15 minutes (or until slightly thickened), stirring occasionally.
-Makes 8 servings.
