Jefferson County Recipe of the Day: Stuffed Pork Chops

Serve this recipe with a garden salad!

Stuffed Pork Chops

Ingredients

4 boneless thick cut pork chops (1 to 1 1/2 inch thick)
Your favorite stuffing mix with seasoning, prepared per instructions
1 cup sweet corn
3 tsp. olive oil (divided)
¼ sweet yellow onion, diced
1 clove of garlic, minced
Salt and pepper to taste

Directions

~Preheat the oven to 350 degrees. Prepare the stuffing per instructions.

~In a large skillet heat two teaspoons of olive oil over medium heat. Add the onions and sauté until tender; add the minced garlic and stir constantly for 45 seconds. Add the onion mixture and corn to the stuffing and mix gently then set aside.

~Slice pockets into the pork chops by slicing horizontally in the side, and almost through to the other side. Season the pork with salt and pepper then stuff with stuffing. Sear both sides of chops in 1 teaspoon oil in skillet.

~Place chops in a casserole dish with any remaining stuffing and bake for one hour.
