Black Bean Soup – A great-tasting soup!
My Favorite Black Bean Soup
Ingredients
1 tbsp. Canola Oil
1 small onion, chopped
1 tbsp. chili powder
1 clove minced garlic
2 – 15 ounce cans black beans, rinsed
3 cups of water
½ cup prepared salsa
¼ tsp. salt
1 tbsp. lime juice
4 tbsp. sour cream
Directions:
~Heat oil in saucepan over medium heat. Add onion, chili powder, and garlic to soften (2-3 min.) Add beans, water, salsa, and salt.Bring to a boil.
Reduce heat and simmer for 10 min.Remove from heat and add lime juice.
~Transfer ½ the soup to a blender and puree (be careful with the hot liquids). Stir the puree back into the saucepan.
~Serve with sour cream.
