Corn Fritter Casserole – a great side dish!

Corn Fritter Casserole

Ingredients

3 tablespoons butter, softened
3 large egg whites
8 oz. block of low fat cream cheese, softened
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1 can whole kernel corn, drained
1 can cream-style corn
1 pkg. Jiffy corn muffin mix
black pepper to taste
Cooking spray

Directions

~Preheat oven to 375.

~Combine first 3 ingredients in a large bowl. Stir with a fork until smooth. Stir in onion, bell pepper, and both cans of corn. Mix well.

~Add muffin mix and freshly ground black pepper to taste. Stir until well combined.

~Pour into 11×7 baking dish coated with cooking spray. Bake 45-50 minutes.
