Holiday Potato Candy
Ingredients
1 medium potato
1 cup peanut butter
1 box confectioner’s sugar
red and green food coloring, optional
Directions
~Boil potato, skin on, until done.
~Remove skin, mash potato in a bowl. Add sugar and stir until a dough like consistency. Divide and add food coloring, if desired.
~Roll out on waxed paper. Spread peanut butter on top of potato dough. Roll into a log and cut into 1/4 inch wide pieces.
