Peanut Butter Banana Cake – a favorite at any event!

Peanut Butter Banana Cake


1/2 cup butter, softened
1-1/2 cups sugar
2 eggs
1 cup mashed ripe bananas (2 to 3 medium)
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup 2% milk

1/3 cup creamy peanut butter
1/3 cup 2% milk
1-1/2 teaspoons vanilla extract
3 cups confectioners’ sugar


~Preheat oven at 350°.

~In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla.

~Combine the flour, baking powder, and baking soda. Add to creamed mixture alternately with milk, beating well after each addition.Transfer to a greased 13-in. x 9-in. baking pan. Bake for 30-35 minutes. Cool on a wire rack.

For frosting

~In a small bowl, beat the peanut butter, milk, and vanilla until blended.Gradually beat in confectioners’ sugar until smooth.

~Spread over cake.
