Jefferson County Recipe of the Day: Spicy Chicken Chili


Here is an excellent alternative to basic chili!

Ingredients

2 medium onions, chopped
1 tbsp. canola oil
4 garlic cloves, minced
2 – 4 oz. cans chopped green chilies
2 tsp. ground cumin
1 tsp. dried oregano
1/4 tsp. cayenne pepper
1/4 tsp. ground cloves
2 – 14 1/2 oz. cans chicken broth
4 cups cubed cooked chicken
3 – 15 1/2 oz. cans great northern beans, rinsed and drained
2 cups shredded Monterey Jack cheese

Directions

~In a soup kettle, saute onions in oil until tender. Stir in garlic, chilies, cumin, oregano, cayenne, and cloves. Cook and stir for about three more minutes.

~Add broth, chicken, and beans. Simmer, uncovered, for 15 minutes.

~Remove from the heat. Stir in cheese until melted.

~Makes eight servings.
