Country Cordon Bleu Chicken

Country Cordon Bleu Chicken

6 skinless, boneless chicken breast halves
6 slices ham
6 mozzarella cheese sticks
¼ tsp. salt
¼ tsp. pepper
½ cup butter, melted
1 tsp. minced garlic
1 tsp. onion powder
1 cup bread crumbs
½ cup graded parmesan
1 tsp. paprika

Directions

  1. Preheat oven to 350 degrees. Lay each chicken breast out flat and pound to 1/2 inch thickness. Sprinkle both sides of chicken with salt and pepper. Place a slice of ham on each piece of chicken and then a cheese stick. Trim the ends of the cheese stick if it extends beyond the edges of the chicken. Then roll the chicken around the cheese and ham and secure with a toothpick.
  2. Combine melted butter, garlic, and onion powder. In a separate bowl combine bread crumbs, parmesan, and paprika. Dip each chicken roll in the butter then completely coat in the breadcrumb mixture.
  3. Place coated chicken rolls seam-side down in a greased baking pan and cook for about 35 minutes or until the chicken is lightly browned and the juices run clear.
  4. ~Serves 6 people.
