Jefferson County Recipe of the Day: Granola Blueberry Muffins.

This recipe makes a great-tasting breakfast on the go!

Ingredients

1-1/2 cups whole wheat flour
1/2 cup all-purpose flour
1/4 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup granola without raisins, divided
1 large egg
1 cup buttermilk
1/4 cup canola oil
2 tablespoons orange juice
1 tablespoon lemon juice
1 cup frozen unsweetened blueberries

Directions

-Preheat oven to 400°.

-In a small bowl, whisk flours, brown sugar, baking powder, salt, and baking soda. Stir in 1/2 cup granola.

-In another bowl, whisk egg, buttermilk, oil, and juices until blended.

-Add to flour mixture; stir just until moistened. Fold in blueberries.

-Fill 12 greased muffin cups three-fourths full; sprinkle remaining granola over batter. Bake for 12 to 15 minutes (or until a toothpick inserted in the center comes out clean).

-Cool for 5 minutes before removing from the pan to a wire rack.

-Makes one dozen.
