One good luck ritual is eating green, leafy vegetables because the color and shape of certain greens are similar to money. Many consume vegetables like kale, chard, and cabbage in the hopes of a wealthier new year. People in Germany eat their cabbage in sauerkraut form.
New Year’s Day Sausage & Sauerkraut
Ingredients
4 medium potatoes, peeled and cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 pound smoked sausage, cut into 1/4-inch pieces
1 – 16 oz. package sauerkraut, rinsed and well drained
1/4 teaspoon pepper
1/8 teaspoon salt
Directions
~In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned.
~Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut, pepper and salt.
~Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.
~Makes four servings.
