Jefferson County Recipe of the Day: Peanut Butter Popcorn Bars.
These chewy snacks are perfect for peanut butter lovers!
Ingredients
10 cups popped popcorn
1/2 cup sugar
1/2 cup light corn syrup
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
Directions
-Place popcorn in a large bowl; set aside.
-In a saucepan over medium heat, bring sugar and corn syrup to a boil, stirring constantly. Boil for one minute. Remove from the heat.
-Stir in peanut butter and vanilla; mix well.
-Pour over popcorn and mix until well coated.
-Press into a buttered 13×9-in. pan. Cool slightly before cutting.
-Makes two dozen.
