Jefferson County Recipe of the Day: Tex-Mex Stuffed Pepper

This tasty recipe works as the main course or as a side dish!

Ingredients

2 cans whole kernel corn
1/2 cup of salsa (your favorite flavor)
2 cups fresh or canned diced chile peppers
2 medium bell peppers (green, red, yellow, or orange)
1/2 cup of shredded cheddar or pepper jack cheese
5 tablespoons of Hormel Real Bacon pieces (or cook and crumble 2 slices of actual bacon, if you prefer)

Directions

~Preheat the oven to 350 degrees. Line a casserole dish with aluminum foil and spray with nonstick cooking spray.

~Cut the bell peppers in half, and remove the seeds. Place each pepper half, open side up in the lined casserole dish.

~Drain the corn. Mix the corn, salsa, and the diced chile peppers together in a medium bowl, stirring until well combined.

~Spoon the corn, salsa, and chili mixture into each pepper half in equal proportions. Then sprinkle the bacon pieces over each stuffed pepper in equal proportions. Sprinkle the bacon pieces over the stuffed peppers in equal amounts.

~Place the peppers in your preheated oven and bake for 30 minutes.
